A new website for Gluten & Dairy Free recipes is being launched. (I told you vegans and allergy sufferers that I'd have news for you soon.)

Linda Rickman, a mom with gluten intolerant kids, is another in the long line of moms who are kindly sharing what they've learned in the kitchen over the years. Rickman's site is http://glutenfreedairyfreerecipes.com/.

Gluten Free Dairy Free Recipes, a new online business based in Colorado, today announced the launch of their website glutenfreedairyfreerecipes.com. This new site aims to provide nutritious and delicious recipes for people who live gluten and dairy free lifestyles.

Recipe creator and Gluten Free Dairy Free website author Lisa Rickman decided to adopt a gluten and dairy free diet when she discovered a gluten intolerance in her children. Around this time, Lisa had a series of private tests done on each member of her family and determined that three of her family members had the Celiac gene, and the other two had a gluten intolerance.

Celiac disease is commonly characterized by a gluten and dairy intolerance in its carriers. It is a condition that prevents the small intestines from absorbing certain parts of food, specifically gluten. Gluten is found in wheat, barley, rye, and possibly oats and should be avoided by people with Celiac disease.

Recipes on the site range from smokin’ good chicken to gluten free pretzels, and also include gluten and dairy free desserts, low calorie shakes, and a bean bread recipe. Something for everyone!

“As a mom who wants only the best for her children and their health, that means knowing what goes into their food and ultimately their bodies,” says Rickman. “I am constantly cooking for them and with them. My hope is that they grow up knowing what is good for them and that healing can happen through food and taking care of themselves is the best way to honor their bodies. Oh yeah… and that gluten free food can taste amazing too!”

Claire Hopley in the Amherst Bulletin wrote about several new cookbooks that included a couple I thought I'd pass along.

Living Without Magazine Catches National Buzz


I've done a couple of mentions of Living Without magazine. It bills itself as the "magazine for people allergies and food sensitivities," which I assume is most of you reading this. Check out that link to their website for lots of recipes and other information.

The Washington Post has finally caught up to our world. A recent Health Scan column was about food allergies. A recent - but not the most recent - issue of Living Without got featured.

"Living Without," August/September issue

"Living Without," a magazine with a sad name, is for people with food allergies and sensitivities. The current issue features an interview with celebrity chef Ming Tsai, who owns the Boston-area restaurant Blue Ginger and serves as a national spokesman for the Food Allergy and Anaphylaxis Network. When Tsai's 10-year-old son, David, was an infant, he tested positive for dairy, wheat, soy, egg, shellfish, nut and peanut allergies. "When your child has life-threatening food allergies, it's your number-one concern," Tsai says. "It affects everything." David's diagnosis made allergy awareness Tsai's calling, he says; Blue Ginger provides diners with detailed ingredient lists of every dish.

I don't understand why a national newspaper is so far behind the times. The new October/November issue is already out. If you want to take a look at its content, visit that page on their website. Gluten-Free... Nail Polish. What?

Case #1874 from the files of mothers who develop allergen-free products for their kids involves Natalie Bauss and Katy Scheffler. "Scheffler has to pay close attention to ingredients because her family has a wide range of food allergies, including lactose, gluten and yeast," wrote Shandra Martinez of The Grand Rapids Press in an article found on MLive.com.

So they "channeled their passion for organic ingredients and concerns about food allergies into the Keeki Pure and Simple line of products: lip balm, nail polish and polish remover."

Wait. What? Why does nail polish or polish remover have to be gluten-free? (Is there any nail polish that isn't?) Even lip balm. There are some allergens that could produce a reaction from single touching, but I don't believe that even licking all the lip balm off one's lips could provide enough gluten to have a reaction. Even assuming that lip balm contains gluten normally.

And that raises an interesting question. Does any lip balm contain gluten?

You can quickly find sites that say yes.

But what kind of lip balm? Which brands?

Searching brings up dozens of brands that claim to be gluten-free. Blistex, no. Carmex, no. Burt's Bees, no. Aveeno Essential Moisture Lip Conditioner, no. ChapStick, no. Ecolips, no. The Merry Hempsters, no. Nivea, no. Savonnerie, no. Badger Balm, no. Boston America, no. Some of these contain warnings that the ingredients may come into contract with gluten or other allergens in the manufacturing process.

Remember, however, that skin contact with gluten is not an issue. Only swallowing a sufficient quantity of gluten is.

So that brings me to Bonne Bell. Most of its brands contain no gluten. However, some do. Here is the list that was given on the Gluten Free Betsy website of gluten-containing products.

The Savvy Celiac blog reported a study that states that "The smallest amount of gluten which has been shown by a biopsy to cause damage to a celiac is 0.1 gram per day (Catassi et al.)." On the other hand, the University of Chicago Celiac Disease Center sets a higher risk standard,"As little as 1/8 of a teaspoon of flour is enough to set off this abnormal response." That's about 0.3 grams. Both those numbers, while small, are likely larger than the amount of gluten in any one application of lip balm, especially if you don't swallow it all.

The point is a subtle one. Most cosmetics that are applied to skin don't matter if they contain gluten. Gluten does not get absorbed through skin. It must go through the digestive system. Nail polish shouldn't be any worry unless you lick and suck all the polish off.

Lip sticks, or lip balms, or lip glosses, or lip conditioners are more likely to be licked and swallowed. Many brands can be found with no gluten at all. Of the brands that do contain gluten, an occasional application shouldn't be cause for worry, especially if you allow them to flake off.

Gluten-free is mostly a gimmick, selling you products by announcing that they don't claim an ingredient that very few contain in the first place. But that's marketing for you. Making a virtue out of something you never had is an ancient sales technique. Green vendors may be rediscovering its effectiveness, but it's really an evergreen, old as the hills.

Chelsea's Vegan Wedding Cake

Every media outlet in the known universe has an article on Chelsea Clinton's wedding today. How can I say this? Because even The Hill, a specialty, small-circulation, insider's paper that doesn't cover anything but Congress has an article on Chelsea's wedding.

I don't want to break media law, so I need to have a Chelsea article too.

And I'll quote from The Hill to do it, completing the loop.

Chelsea Clinton is a vegan, so guests can expect a dairy-free wedding cake, as well as other non-vegan choices.

Oh, and the news doesn't stop there, my friends. The cake is also gluten-free! From the bridal site, AisleDash.com:
Our sources tell us that the bride's gluten allergy is making it difficult to find a wedding baker. Calls to three top bakers in New York state, including family favorite Lulu's in Scarsdale, have not confirmed who will be making the couple's wedding cake but a gluten-free cake is sure to be on the wedding menu.

Look, if you're upset that the daughter of a president has had an elaborate wedding, get over yourself and study some history. President's daughters - whether their fathers happen to be in office or not - have always had fairytale weddings.

And Chelsea appears to be a model for all. Bright, modest, educated, unspoiled by fame, and utterly untouched by scandal. If you can't be happy for someone like her then look inward for your faults.

Mazel tov, Chelsea and Marc. May a dairy-free, gluten-free life of happiness await you both. (Or dairy-, gluten-, and meat-filled if you, Marc, are none of the above.)

UPDATE:
Dianna Mardar of Philly.com has the latest on Chelsea's cake. Seems that all the early reports were severely deficient in the fact department.

First, the baker was wrong. The cake was "a triumph for Frances and Maarten Steenman of La Tulipe Desserts in New York's Westchester County."

And while Chelsea is a vegan, the cake itself wasn't. Gluten-free to be sure, but filled with dairy. Or at least chocolate mousse. And butter, according to other reports. Not to mention eggs.
Some media outlets speculated that the wedding cake was also dairy-free because the bride is a vegetarian of long standing. But Frances Steenman said that was not the case.

"Instead of flour, we used a special brown rice blend that contains no barley, rye, oats, or wheat," she said. "But no, it was not a vegan cake."

Honestly, do reporters at major outlets not understand the difference between vegan and vegetarian? I admit that despite the number of stories referring to her as a vegan, there are also reports saying that she is a vegetarian instead. Chelsea has stayed far enough off the radar that not knowing this bit of info about her isn't surprising.

Either way, I'm sure all of you understand the distinction: vegetarians often have dairy and eggs; vegans do not. Vegan cookbooks are fine for those looking for dairy-free recipes; vegetarian cookbooks are often problematic. How can there still be people who don't get it?

Droppa and Droppa Expand Through Bread Factory


Droppa and Droppa started their gluten- and dairy-free baking business in the traditional way, because Joslyn Droppa had coeliac disease. They wanted to do food that was so fresh it didn't even have the presevatives and additives that some people are sensitive to. Their little business is based in Bideford, North Devon, in the U.K.

They're getting bigger, though. The industry newsletter Conveying News reported that:

Droppa & Droppa has agreed a deal to supply its range of products to The Bread Factory.

Droppa & Droppa make a range of 'free-from' goods including gluten, wheat and dairy-free breads which will be provided to London-based The Bread Factory's customers, reports bakeryinfo.co.uk.

The move will increase the production of specialist breads – news which will be welcomed by those in the baking industry.

Jocelyn Droppa, joint-owner of the company, expressed her belief that the deal would help those suffering from allergies to enjoy a wider range of food.

"By supplying The Bread Factory we hope that coeliacs and those who are wheat and/or dairy intolerant can enjoy good baked goods as much as the next person," she told the website.

The Bread factory has six retail shops in London, operating under the Gail's chain, and supplies goods to several of the capital's top restaurants and hotels.

The Intolerant Family Cookbook

No family's cooking is like any other family's cooking. That's the big lesson I've taken from the millions of mothers who have confronted the problem of allergies and intolerances in their own households and found none of the hundreds of cookbooks already on the market suitable.

Nancy Strohs of the Milwaukee Journal Sentinel wrote Family learned to tolerate food intolerances about Ellen Fitzgerald, who within two years found she was both lactose and gluten intolerant, and her daughter Molly Lepeska, who got a diagnosis of type 1 diabetes.



They self published The Intolerant Family Cookbook: Gluten-Free, Dairy-Free, Family Friendly Food.

The 120 or so recipes, a mix of family favorites and recipes adapted from food magazines such as Bon Appetit, are not intended to comprise a comprehensive collection for all occasions and tastes. Carolyn Humphries Gluten-Free, Dairy-Free Bread Recipes

Carolyn Humphries has written over 40 books, most of them about food. You can see 80% of them at her publisher's page. The latest one is Gluten-free Bread & Cake from Your Breadmaker: With Full Details for Dairy or Lactose Intolerance.


If you've been yearning for the taste and textures of real breads then here they are – but gluten free. Truly amazing alternatives! Two Gluten-Free Cookbooks by Sue Shepherd

Sue Shepherd is, according to the blurb on her publisher's site, "an accredited practicing dietician and a sufferer of coeliac disease, [and] recognized as Australia's leading dietician in the dietary management of coeliac disease and irritable bowel syndrome. She has an extensive knowledge of gluten-free food and nutrition, which she has used to produce two sell-out self-published cookbooks on the subject. Her latest book is Gluten-Free Cooking (Penguin, 2007).

No, it's not. Publishers, sheesh. The new book's full title is The Gluten-free Kitchen: 100 More Recipes for People with *gluten and lactose intolerance*irritable bowel syndrome*coeliac disease*fructose intolerance.



I Can Eat That opens with a brief explanation of intolerances. The recipes are divided into five main chapters (Plate-free food; Salads; Mains; Desserts; and Baking) and three 'mini' chapters (Soups; Comforting sides; and Puddings). The feel if this book is a little more 'comfort food' than the previous one, with a really good range of dessert and baking recipes (which are often seen as a limiting factor on a gluten-free diet).

Nutritionist Melissa Diane Smith, author of Going Against the Grain, has written a new book, Gluten Free Throughout the Year: A Two-Year, Month-to-Month Guide for Healthy Eating. It has 30 recipes, but is not strictly a cookbook, having mostly tips about gluten-free living.

Chocolate Cake Brownies

If you're getting as sick of the snide comments about what to feed people who can't eat "anything" as I am your secret wish is probably that they someday need to cope with serious allergies and then see how whiny they are.

In the meantime, how about a recipe for Chocolate Cake Brownies that uses no dairy, wheat, or eggs.

Von Broussard of the Record Live of Orange Country, Texas provides a recipe.

It uses rice milk, flaxseed meal, brown rice flour, and amaranth flour, which can be found in natural food stores and similar sections of large supermarkets.

One caution. Although the original intent of the recipe was to have no sugar because it was for a diabetic. Instead, the recipe uses honey.

That's problematical. While not every form of sugar is equally bad for diabetics, there's no good evidence that honey is an allowable substitute. You'll find websites that disagree with that. Not surprisingly, they're honey sites. (Sugar in small doses is allowable: what I'm saying is that if you're avoiding sugar in a situation, calling it honey doesn't improve it.) There is also something called sugar-free honey but that's neither sugar nor honey but can be used as a substitute in recipes.

Anyway, test the recipe. Let me know the results.

Pamela's Products

Lisa - the Gluten Free Foodie celebrated her first gluten-free cake.

I am so excited that my first Gluten Free King Cake turned out - Ca c'est bon! (That's good!)

I decided to make it easy so I tweaked a few recipes and used Pamela's Products bread mix. This is a combination sweet bread and Challah bread ... YUM! It is not only Gluten Free but Dairy Free and Soy Free too! I used Earth Balance non-dairy non-soy, natural buttery spread and Nielsen Massey Bourbon Vanilla paste to enhance the yeasty flavor of the bread. I purchased the beautiful traditional colored sugars from Williams-Sonoma in Purple (justice), Green (faith) and Gold (power) that represent the three wise men. It is also a tradition to hide a prize - a bean, coin or plastic baby inside the cake to represent the Christ child. The finder of the prize or baby is said to host the following year's festivities. I must get it every year because I love hosting Mardi Gras!

Pamela's Products sounded interesting, so I scouted them up.



They make a variety of gluten-free and wheat-free cookies, biscotti, and baking mixes. Their allergy page says:

You can also check that page to see which products are also dairy-free. Most are. A few contain butter, so they probably won't be a problem for those with mild lactose intolerance. The Baking & Pancake mix contains buttermilk, which may therefore have a bit more lactose.

Two Gluten- and Dairy-Free Recipes

The AllergiesAndMe.com website has a recipes page.

They've been adding to it from other bloggers and authors and announced that in a press release.

Tina Turbin is a children’s book author, Danny the Dragon, and provides gluten-free support on her blogsite, www.GlutenFreeHelp.info as well as her main website, www.TinaTurbin.com. Tina has donated one of her favorite gluten free recipes, "Browny Muffins", and it should become a household favorite.

Megan Hart is one of the founders of the blogsite, WelcomingKitchen.blogspot.com. In addition, she has co-authored some allergen free cookbooks with Kim Lutz. Their newest Welcoming Kitchen will be available in September. Megan’s recipe contribution this week is “Gluten Free Apple Cider Donuts”. These donuts have a coffee cake-like texture and will start your mornings off with a skip.

I've corrected the name of Megan Hart's blog, which was wrong in the press release.

Purely Elizabeth Dairy-Free Gluten-Free Baking Mixes

The purely elizabeth company, all lower case, makes "baking mixes free of sugar, dairy, wheat, and gluten," all lower case. It won the Sweetest Thing award, which has capital letters, making it far less hip.



There was, of course, a press release.

This year purely elizabeth earned top billing as the "sweetest" food with thousands of votes pouring in for the healthy baking mixes. ...

Apparently the writer of the press release thought commas were as unhip as caps. typography free press releases are healthier in the new millennium.
